Who We Are
Hello, we are Carolina and Cesar. In the autumn of 2017, Cesar was diagnosed with Relapsing-Remitting Multiple Sclerosis. However, he had already begun experiencing early symptoms of the condition at least a year before his diagnosis.
My children and I had just arrived in Canada, so Cesar was working long hours. The stress and lack of healthy habits in terms of rest, hydration, and nutrition became the trigger for balance, coordination, and chronic fatigue problems. However, we initially thought it was just tiredness or a tough day at work.
His first flare-up, though we were not yet familiar with the term, served as a wake-up call. A few hours after arriving at work one day, his legs became completely immobile. He literally couldn’t take another step. He was exhausted and filled with fear and uncertainty about what was happening to him.
We went from one medical office to another, with each specialist requesting new tests only to say that there was no conclusive evidence and referring us to more doctors or medical exams. Meanwhile, the symptoms (invisible to others but not to the patient) worsened and new ones appeared. Finally, an MRI was ordered, and the result was Multiple Sclerosis with more than fifteen lesions in the brain and optic nerve. Along with those words, our world came crashing down, especially because we had just welcomed our little daughter four months earlier. It was a very difficult time. We couldn’t think clearly and experienced fear, anger, frustration, and depression. Can you relate?
Like all MS patients, we were told that there was no cure for this condition, that MS was very aggressive, and that he would be disabled within a short period of time. Cesar started an injectable interferon treatment, but the side effects were worse than the symptoms of Multiple Sclerosis and did not help improve his condition. One year after his diagnosis, he suffered a serious work accident, losing his balance and becoming occupationally disabled. His health had deteriorated to the point where he could no longer walk on his own and needed a cane for balance. He also felt deeply depressed because he could no longer work, enjoy his family, or do anything he loved.
We realized it was time to try something different. Despite having access to top-notch doctors and treatments, conventional medicine was not working. I have always been curious, so I began studying and researching. I read every study and testimonial about natural healing that crossed my path. Many sleepless nights followed, not due to worry but due to the fascination of knowing that it was indeed possible, that there was hope. If his body had created this disease, then it could also learn to heal.
If Multiple Sclerosis is caused when the B and T cells of the immune system enter the brain and spinal cord, attacking and destroying the Myelin, which is the protective layer around the nerve fibers, causing inflammation, then we needed strategies to naturally reduce inflammation. We went back to the basics—the cell.
The cell is the fundamental anatomical unit of all living organisms. It needs the right fuel to function properly, and that fuel comes directly from our food. Thus began this wonderful journey of learning which foods, routines, and daily activities my husband needed for his cells to receive the necessary nutrients and energy control to function correctly.
My love for cooking was also born, experimenting with flavors and ingredients that were previously unknown to me. The best part was knowing that I was helping my husband in this healing process and that our entire family was nourishing ourselves properly. I also began my studies in holistic health and nutrition.
With the implemented changes, my husband no longer needed the cane, his energy levels increased, as did his balance, coordination, and mental clarity. Currently, Cesar no longer needs all the medications he initially used to control the symptoms. He no longer needs to take naps during the day, can exercise for two continuous hours without chronic exhaustion, and, most importantly, can play with our children and continue to enjoy our family.
Why am I telling you all this? Because I know it is possible. Because I want you, who are reading this and cannot walk long distances because you get tired or because foot drop causes you to stumble; you who cannot read a story to your child because vision problems prevent you from doing so; you who can no longer dance with your partner because you lose balance or coordination.
